Sonny’s Smoked Fish
dark brown sugar
rock salt
fish (cut into smoking size pieces )
Optional (Garlic salt, Old Bay spice, Jalapeno juice and peppers)
Implements needed:
Electric smoker
Wood chips (alder, cherry, apple, hickory) use one or mix.
Brine:
Layer the fish, skin side down in container. Liberally sprinkle a handful and half of rock salt. Spread 2 hefty handfuls of dark brown sugar over the fish (add optional ingredients if desired). Repeat the process of layering fish and brine until the container is 3/4 full of fish. This will allow for the expansion of fluid from the fish. Keep in a cool, dry place as in a refrigerator. Check after one day to see if it is to your taste and ready for smoking.
Smoking Process:
After pulling fish out of the brine, rinse lightly with tap water in container. Place fish in smoker skin
side down. Try to have continuity of size and thickness of fish. Have your desired wood chips already in place. Smoke for 25 to 30 minutes. Let cool down for 15 to 20 minutes (unplug smoker). Repeat, adding wood chips as needed. Sample 2nd smoking after it’s cool down phase. If not to desired taste, smoke a third time. Thicker pieces will need more cycles of smoking and cooling down. (possibly up to 5 cycles). Remember to smoke the fish, don’t cook it!! If the fish is to be frozen after smoking, it may become somewhat drier in taste. Experiment with small quantities to familiarize yourself with the smoking process.

I have frozen cod fillets, fresh prawns that need using up, would wish for smoked haddock or some salmon, but that’s it. I have tomatoes, fresh and tinned, loads of uncooked spuds, red and white onions, and some mild cheese, No cornflour, some milk. Whaddya think folks?

Salmon and Potato Pie — I would add ALL the seafood ya got!!!
INGREDIENTS
6 potatoes, peeled
1 small onion, minced
1 clove garlic, minced
1 tablespoon butter
1 (6 ounce) can red salmon, undrained
1 teaspoon dried thyme
1 cup milk
2 (9 inch) unbaked pie shells
1 to taste salt and pepper
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
In a medium saucepan, cook onions, garlic and butter over medium heat until vegetables become transparent in color.
Add onion/garlic mixture, salmon and thyme to cooked potatoes. Mash all together with milk, adding just enough to bring about a mashed potato consistency. Spread evenly into pie shell.
Place second pie shell over top of salmon mixture. Cut slits into the upper shell, then pinch edges of both pie shells together. Bake on lower rack of oven for 45 minutes.

I really want to start eating more salmon (as I’ve been reading about its health benefits), but the only way I like to eat it is smoked (and that’s not the IDEAL way to eat it in terms of health, apparently) – so what is a good salmon recipe that is with *fresh* salmon, *not smoked* for someone who doesn’t really like the taste of fish?

I like to season my salmon with garlic powder, very little chili powder, salt and pepper, seasoning both sides, and then broil in the oven for about 15 min. You’ll know it’s done when it starts to flake apart. If you like onion, you can try onion flakes as a seasoning too. Experiment with different seasonings, make it fun!

Then smoked @ 225 for approximately 2 hours until the Salmon is light pink in color, firm but moist! During the last 30 minutes the Salmon is mopped with a spicy Chipotle Lime sauce.

I have access to a smoker and wish to make and smoke my own bacon and hams. I have seen some usa websites and they have some recipes using salt petre/ prague powder. I have been told that you cannot buy this in australia ( my local Butcher) I successfully smoke my own fish just using a salt/sugar cure and have a brine pump would the salt/sugar cure be ok for bacon/ham.

Our favorite recipe is
1 pack oodles of noodles (flavor of your choice)
1 can of tuna fish
2 teaspoons or tablespoons mayonnaise
black pepper
Directions:
Drain tuna fish
boil oodles of noodles then drain/remove all of the water (very important)
now mix all the ingredients. and put between bread or eat alone.
our house likes it on bread. sometimes we add a can of baby smoked clams. (drain the clams)
Enjoy.
Note: we make sandwiches.

Broccoli Casserole made with Ramen Noodles
Ingredients
1/2 cup mayonnaise
1/2 cup plain yogurt
1 1/4 cup shredded sharp cheddar cheese
1/3 cup blue cheese dressing
2 eggs
1/2 teaspoon salt
1 1/2 teaspoon fresh ground black pepper
Flavor Pack from Ramen
6 cups broccoli, peeled stems and heads, chopped and blanched in salted water
12 ounces sliced mushrooms, Sauteed in 1 tablespoon butter
1 package chicken flavored Ramen noodles, broken up
Directions
Preheat oven to 350 degrees F.
In a bowl combine mayonnaise, yogurt, cheddar cheese, blue cheese dressing, eggs, salt, pepper, and flavor pack from noodles. In a separate bowl combine broccoli, mushrooms, and broken noodles then toss together wet mixture and vegetables to evenly coat. Place in an 8 by 8-inch baking dish that has been sprayed with non- stick cooking spray and cook for 45 minutes covered. Then remove cover and bake for additional 15 minutes to brown. Cool for 15 minutes before serving

Tonight my fiance offered a turkey leg recipe showdown. I cook 2 he cooks the other 2. I’m in need of a recipe quick!!!!!
I have on hand, onion, celery, tomato, ALL types of spices, Worcestershire sauce, olive oil, rice/balsamic vinager, milk, soy sauce, italian dressing, liquid smoke, flour, capers, fish sauce, fresh garlic, lime, and oranges.
Side items I’m thinking red potatoes, frozen broccoli, or baby bok choys….
*note – I don’t have an outdoor grill!, I know sucks. Thinking oven, Fry, or Broil….
( please no comments on how nice/fun it is to cook together, we do it all the time! ) Thank you!

I’d say you really need to chop the meat up & go from there, otherwise they will just be turkey legs with stuff on the side
All I can think of is turkey soup with rice, celery, onions, garlic carrots. If you have some broth or gravy to add.
Sorry no recipe i just usually throw the ingrediants in and let it simmer.
Or you could make turkey pot pie.
If you have bisquick you could make turkey and dumplings.

I just got a new meat smoker and I am trying to make a good dry rub for my meats before I smoke them. I am going to smoke anything from beef, to pork, to chicken to fish. Any good rub will do, especially if it’s one that has been used in a BBQ competition!!! Thanks to all that respond!

anything with apple is good on poultry or pork…my dad is a king at smoking meats…mmmmmmmm, you just made me really hungry, darn you! And it is too late to eat! Grrrrr, jk.

This is Sensei Tim Rosanelli from Everyday Sensei. Today, I’m going to make for you a smoked salmon omelette. This terrific omelet is packed with protein which is great for everyone out there training hard and looking for post workout recovery. The smoked salmon gives it that hint of delicious smokiness. Ingredients 1 Egg 2 Egg Whites 1 oz Smoked Salmon, shredded 1/4 Yellow Onions, chopped 1 slice American Cheese Salt and Pepper Scramble the whole egg and egg whites with salt and pepper. Heat the olive oil in the skillet with high heat. Saute the yellow onion. Add the smoked salmon or lox with the onion. Then add the scrambled egg. Once cooked on one side flip and add the cheese.
